As a kid, this was one of my favorite foods. If you go to Spain you will find them everywhere, served as a tapa. They are round, breaded, cylinder-shaped or round morsels with many different fillings: chicken, ham, cheese, sea food, or vegetables.
However, it is hard to find croquetas that are filled with just the right amount of tropezones (bits of chopped food in a meal), to make them nutritious enough. To lower the cost of making them, some bars add very few tropezones to the bechamel.
Great croquetas have a generous amount of tropezones in the bechamel. Of course, this is my personal opinion. But, if like myself, you lean towards healthier foods, you want to have less bechamel, which is made with butter, flour and milk. Delicious, but on the rich side.
The best way to enjoy great croquetas is to make them yourself. A great appetizer and party food!
